4 small boneless skinless chicken breasts (cooked through in skillet)
1 1/2 c. water
1 can cream of chicken soup
Pepper to taste
2 c. minute rice (uncooked)
2 c. frozen broccoli flowerets (thawed)

Directions:
Directions:
Set cooked chicken aside. Put water, soup, and pepper in the skillet. Bring to a boil. Stir in rice and broccoli. Place chicken breast on top of rice mixture, cover. Cook on low heat for 5 minutes or until rice is done.

Velveeta cheese can also be added to the rice mixture in small chunks. The kids seem to eat more that way.
