1/2 cup flour
1/2 cup milk
pinch of salt
1 Tbs sugar

Directions:
Directions:
Preheat 8" skillet or crepe pan to 400 degrees.
Mix eggs, flour, milk and salt until well blended. Melt butter in a hot pan and wipe with paper towel, leaving a thin film of butter. To make a large and very thin pancake, pour in enough batter to cover bottom of pan. (If using a skillet roll the pan to spread the batter thinly). Cook until the sheen is off the top of the batter, then turn and cook the other side briefly. Butter each pancake, spread with jam, honey or berry coulis and roll up; sprinkle with powdered sugar.
