3/4 cup butter
1 cup mushrooms
6 green onions, sliced
2 cups long-grain white rice
2 tsp salt
1/2 tsp white pepper
1/16 to 1/8 tsp saffron threads
3 cups canned chicken broth
1/2 cup extra-dry vermouth

Directions:
Directions:
Melt butter in large saucepan; add mushrooms and green onions and saute until soft. Add rice, salt, pepper and saffron (dissolve threads in a small amount of water) and stir until rice is coated with butter. Add broth and vermouth, cover pour tightly, and stir over low heat to simmer for about 1 hour or until all liquid is absorbed and rice is tender. Add more liquid if necessary-1/2 cup chicken btoh and 1-2 Tbs vermouth.
