1/2 cup unsalted pistachios
1/3 cup bread crumbs
2 Tbs parmesan cheese (optional)
1/4 tsp kosher salt
1-2 Tbs olive oil (optional)
4 (4 oz) salmon fillets
2 Tbs dijon mustard
ground black pepper to taste

Heat oven to 425

Spray baking sheet with cooking spray. In a food processor, combine nuts, salt, pepper, bread crumbs and cheese. Pulse process until fine. Transfer to bowl, drizzle with olive oil and toss until bread crumbs are well moistened.

Spread top of each fillet with mustard. Press mustard coated side into crumb mixture to generously coat fish. Set coating side up onto pan and sprinkle with remaining mixture to create thick encrustment.

Bake until topping is crisp and browned and fish is cooked through (10-12) min or grill.

This recipe is compliments of my friend, Emilia. It's a killer recipe! Super easy, super fast, it looks amazing, and it tastes fabulous. I make it without the cheese and olive oil. Great for weeknights or entertaining.
