1 large onion, peeled and chopped
3 garlic cloves, peeled and finely chopped
4 Tbs unsalted butter
2 lb butternut squash, peeled, seeded, and cut into 2” pieces
3/4 lb tart apples (such as Jonathan, Winesap, or Granny Smith), peeled, cored, and coarsely chopped
1 cup course fresh bread or cracker crumbs
2 cup apple cider
4 cup roasted vegetable broth or vegetable stock
2 tsp salt
1/2 tsp freshly ground white pepper
1/3 tsp dried marjoram (you can sub oregano)
dash of allspice

Directions:
Directions:
In a stockpot, sauté the onion and garlic in the butter until soft, 10-12 minutes. Add the remaining ingredients. Simmer the soup, uncovered for 45 minutes, or until the squash is tender. Puree the soup in batches in a food processor and reheat.

Serves 8.
