1 ¼ C beer
4 C all-purpose flour
2/3 C sugar
1 Tbsp baking powder
1 Tbsp caraway seeds
¾ tsp. salt
½ tsp. cracked pepper
1 C raisins
¼ C butter, melted
2 eggs

Directions:
Let beer stand at room temperature until flat, about 20-30 minutes. Preheat oven to 350° and coat cooking sheet with cooking spray.
In a large bowl, combine flour, sugar, baking powder, caraway seeds, salt, & pepper. Stir in raisins. Add beer, butter & 1 egg. Mix together until a dough forms.
On a floured surface, knead dough until smooth. Shape into a round loaf. Place on baking sheet.
With kitchen shears or a serrated knife, cut a ½ inch deep X into top of loaf. Lightly beat remaining egg and brush it over the dough.
Bake 55 minutes or until loaf sounds hollow when tapped on bottom. Remove from pan and cool on rack.
