1/2 c reduced sodium soy sauce
1/2 c pineapple juice
1/4 c oil
1 Tbs brown sugar
1 tsp garlic powder
2 tsp ginger
1 tsp dry mustard
1/4 tsp pepper
1 1/2 lbs chicken breasts - cut into 1 inch cubes
1 can unsweetened pineapple chuncks - 15 1/4 ounce
1 large green pepper
12 medium mushrooms
18 cherry tomatoes
3 cups cooked rice

Directions:
Directions:
Combine first 8 ingredients in a saucepan, bring to a boil. Reduce heat, and simmer 5 minutes, let cool. Pour mixture into a shallow dish, add chicken, tossing gently to coat. Cover and marinate 1 hour, stirring occasionally. Remove chicken from marinade, reserving marinade. Alternate chicken, pineapple, green pepper, mushrooms and tomatoes on skewers. Grill about 20 minutes, turning and basting with marinade. Serve over rice.
