Fresh bluefish fillets
lemon juice
mayo
grated Parmesan cheese

Preheat oven to 350º. Place fillets on lightly greased cooking sheet (skin side down). Sprinkle lightly with lemon juice. TOTALLY cover the fillet with mayonnaise. Sprinkle with cheese. Bake until mayo is golden on top and fish flakes when fork is inserted.

Another great way is to soak fresh fillets in milk (buttermilk is best if you have it) for 30 minutes. Drain and fry quickly in 1" of hot oil until brown. Great served with hot pepper vinegar.
