2 c. sugar
1 1/2 c. Wesson oil
4 eggs, one at a time
2 c. flour
2 tsp. baking soda
1 tsp. salt
3 c. raw grated carrots
2 tsp. baking powder
2 tsp. cinnamon

Directions:
Directions:
Mix sugar and oil well (sometimes I use 1/2 c. oil and
1/2 c. applesauce so cake is little moister). Combine all ingredients and beat for 3 minutes. Bake at 350º for about 35 min. in 2 round or square pans. If a 13x9 pan is used, baking time is a little longer, approximately 50 min. Top with cream cheese icing.
