2 cups sugar
1 cup vegetable oil
3 large eggs
1 can (15 or 16 oz.) solid pack pumpkin
3 cups all purpose flour
1 teaspoon ground cloves
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon baking powder
1 cup coarsely chopped walnuts (optional)

Directions:
Preheat oven to 350 degrees. Butter and flour two 9 by 5 by 3-inch loaf pans. Beat sugar and oil in large bowl to blend. Mix in eggs and pumpkin.
In another large bowl, sift dry ingredients together.
Stir dry ingredients into pumpkin mixture in 2 additions. Mix in walnuts if desired.

Bake until tester inserted into center comes out clean, about 1 hour and 10 minutes. Transfer to rack to cool about 10 minutes. Remove from pans and let cool completely. If you want, 2nd loaf can be frozen for up to 1 month.

(330 convection for one hour)
(Mini muffins – 18 minutes at 330 degrees convection)
