1 can Bush’s Baked Beans (16-28oz) *
½ cup dried apricots chopped
1 can chopped black olives
1 pkg. frozen corn
½ cup chopped red bell pepper
½ cup chopped cilantro (or a little more)
¼ cup chopped green onions or chives
¼ cup lime juice
½ tsp. cumin

Directions:

Combine all ingredients and refrigerate for 2-3 hours. Stir and serve with chips

*can substitute 1 can black beans and 1 tablespoon molasses
