2 chickens
2 pkg long spaghetti (16 oz)
1 can tomatoes (or 15 oz.)
1 c celery, chopped
1 c onion, chopped
2 cans cream of mushroom soup
1 lb sharp cheddar cheese, grated

Directions:
Directions:
Boil chicken in salt water till tender. Skin the chicken and remove it from the bones, cutting it into bite-sized pieces. Boil spaghetti in broth. If short add chicken bouillon, 1 cube in 1 c water.
Mix tomatoes, celery, onion and soup in a separate bowl..
Layer in greased baking dish. Start with spaghetti, then chicken, then mixture, then cheese. Repeat, ending with cheese. It’s up to you to decide how much of each you want in the casserole. It is sometimes difficult to use all of everything but with a little Yankee ingenuity it can be done.

Preheat oven to 300º Fahrenheit.

Place casserole in the over and cook until heated through. If it appears dry add chicken broth for moisture.
For a smaller batch, cut ingredients in half. Optionally, this can be made with canned chicken or from chicken breasts baked and diced.

This is Gangy’s recipe. She loved to take this dish to church for parish luncheons. That is the reason it calls for 2 chickens. It makes a lot!!
