Pancake:
6 eggs
1 1/2 cups milk
1 cup all-purpose flour
3 Tbs. granulated sugar
1 tsp vanilla extract
1/2 tsp salt
1/4 tsp ground cinnamon
8 Tbs. (1 stick) butter
2 apples, peeled and sliced thin
2 tablespoons brown sugar
Orange syrup:
1 cup firmly packed brown sugar
1/2 cup orange juice
2 Tbs grated orange peel

Directions:
Directions:
Preheat oven to 425º. Combine eggs, milk, flour, granulated sugar, vanilla,salt, and cinnamon in a mixer bowl, blender. or food processor. Blend and set aside. Melt the butter in a 9x13" baking dish. Layer the apples in the melted butter and return to the oven until the butter sizzles. Do not let the butter brown. Remove the pan from the oven; immediately pour the batter over the apples and sprinkle with brown sugar. Bake for 20 minutes or until puffed and golden. Serve immediately with syrup.
Syrup:
Combine all ingredients in a small saucepan while the pancake is baking. Simmer over low heat for 5 minutes. Pass the syrup with the pancake.
