1 stick butter
1/2 c. onion, chopped
1/2 c. flour
2 cans chicken broth
2 cans evaporated milk
6 lg. baked potatoes, peeled (may leave unpeeled if desired)
Salt and pepper to taste
1 lb. bacon, cooked
8 oz. shredded cheddar cheese

Directions:
Directions:
Cook butter and onion; stir in flour and gradually add broth and evaporated milk. Scoop pulp of one potato and mash. Add mashed potato to pan. Cook over medium heat to boil. Dice and add other potatoes . Heat and top with bacon and cheese.
