1 ready-made chocolate crumb pie crust—save lid
14-15 oz can sweetened condensed milk
4 large egg yolkes
½ C fresh lemon or lime juice or a combination of both
Unsweetened whipped cream





Directions:

Heat oven to 325 – centre rack
With wire whisk, beat together egg yolks and juice, then thoroughly blend in condensed milk. Pour into unbaked pie shell. Bake until the centre looks set but still quivery, like gelatin when nudged – about 20-22 min. Cool, place pie crust lid back on and secure, and store in freezer.

1. This pie is best served in very small slices. 2. Unsweetened whipped cream is a must as it counter balances the sweet/sour nature of the pie. Spread a spoonful on each slice. 3. This pie will keep indefinitely in the freezer, does not get rock hard, and can therefore be cut and served when needed. 4. If softer pie is desired, set out at room temperature for 10-15 min.
