5 fillets of salmon
3 cups water
1/4 cup pickling salt
1 Tbs black pepper
6 bay leaves
2 cloves minced garlic
1 1/4 tsp whole allspice
1 Tbs. cinnamon bits
1 1/4 tsp whole cloves
1 Tbs coriander, ground
2 tsp ginger, ground
1/4 cup maple syrup
1/2 cup honey

Directions:
Directions:
Combine brine mixture and cover salmon; allow to marinate for 8 hours. Wash off with cold water. Pat dry and allow to dry on a rack for 2 hours. Sprinkle with a little ground cinnamon. Put in smoker and follow directions on your smoker.
