3 tablespoons olive oil
2 cloves garlic, crushed/chopped
1 cup onion, chopped
1-14.5 oz can diced tomatoes, drained
1/3 cup fresh parsley, chopped (dried also works well)
1-28 oz jar great northern beans
2 tablespoons lemon juice
Salt and pepper to taste

Directions:
Directions:
Cook onion and garlic in olive oil over medium heat for five minutes. Add tomatoes and parsley and cook for five more minutes. Add beans and cook over low heat for five more minutes. Season with lemon juice, salt and pepper and serve. Delicious with cornbread
