4 medium-size red potatoes, cut into 8 wedges
¼ c olive oil
4 garlic cloves, pressed
1 tbsp dried thyme
1½ teaspoons salt
1/4 teaspoon pepper
1 red onion, sliced in 1/8" rings
1 zucchini, quartered
1 yellow squash, quartered
1 portobello mushroom, quartered

Directions:

Preheat the oven to 400º Fahrenheit.

Toss together first 6 ingredients in a half sheet pan..
Place in center of oven and cook for 20 minutes. Add onion and next 3 ingredients, and bake, stirring occasionally, for an additional 15 minutes.
