6 slices of bacon
1/2 c onion, chopped
2 tbsp balsamic vinegar½ key lime, juiced

Directions:
Cut the bacon into 1/4 inch pieces and cook until crisp. Add the onion and cook until it begins to turn dark. This is important to the final taste. Do not drain the fat. Add the balsamic vinegar, lime juice and pepper, mixing well. Finally, add the drained green beans and cook until heated through.

Personal Notes:
This lovely recipe comes from a real Texan woman. The recipe smacks of yesterday when we didn't know the pitfalls of bacon and bacon grease. It comes from a day where plain food tasted good. If you are worried about clogging your arteries, skip this one. If you want good taste, try it. One time won't kill ya....I don't think.

I omitted the key lime when I made it and it was still delicious. Taste and add sugar or splenda to take the bite out of it if you think it is too tart. Personally it’s the tartness of the balsamic vinegar that I like. Additional vinegar can be added to suit your taste.
