1 chicken, cooked, skinned, de-boned and chopped
1 onion, chopped
2 c cheddar cheese, shredded
12 corn tortillas, cut in quarters

Sauce:
l can cream of mushroom soup
1 can cream of chicken soup
Rotel tomatoes with chills to taste (1/2 to 1 can, depending on your desired level of heat)

Directions:
Directions:
Preheat the oven to 350º Fahrenheit.

In a 13x9x2 inch pan, alternate layers: chicken, tortillas, cheese, onions and sauce, ending with cheese.

Place in the center of the oven and bake for 45 minutes.

Variation:
Brown 1 lb ground beef with 1 pkg taco seasoning and use in place of chicken.

No Texas cookbook would be complete without King Ranch Chicken...so here is mine. I'm not even sure who gave it to me but it has been a staple in the family for ever so long. Cooking abd de-boning the chicken can be a hassle so take some shortcuts. From Kim, take a bought rotisserie chicken and de-bone that. It is quicker and just as tasty. Enjoy!
