2 1/4 C flour
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/4 C white sugar
1/2 C soft shortening
1 C mashed bananas
1 tsp vanilla
2 eggs
1/2 C sour milk (1 1/2 tsp vinegar fill with milk to 1/2 C - this sours the milk)

Preheat oven to 350º
Mix flour, baking powder, baking soda, salt and white sugar. Separately mix bananas shortening, vanilla, eggs and sour milk. Mix dry and wet ingredients together till smooth. Bake in a loaf pan (round) for 40-45 mins - until cake tested comes out clean.
