1 large can tomato juice
2 cups chopped tomatoes, fresh or canned
1 chopped peeled cucumber
2 finely minced scallions
1 chopped green pepper
1-2 cloves garlic, finely minced
1/2 tsp pepper
1 tsp salt
1 TB red wine vinegar
2 TB olive oil
1/2 tsp tarragon
1 tsp minced parsley

Blend everything together.
Refrigerate overnight at least.
It's very easy to make this in the cuisinart.

This is easy and refreshing for the summer. It is good served very cold. This recipe actually belongs to Thelma too, as I gave it to her at her wedding shower!
