Mozzarella Pesto with Marinated Tomatoes Recipe

4 oz mozzarella (chilled and cubed)
1 oz parmesan
1 garlic clove
1 T. walnuts
1 c. fresh basil
2/3 c. mayo
1 T. mustard

6 Roma tomatoes
4 t. olive oil
6 t. sherry wine vinegar
1 t. salt
Pinch of brown sugar

Blend first five ingredients and then add mayo and mustard until blended thoroughly. Chill for at least an hour.

Slice tomatoes in shallow container. Marinate in the rest of the ingredients for at least an hour. Serve with pesto on a baguette.
