Filling:
1 can chiles
2 C corn (fresh or frozen)
Cooked and seasoned chicken (diced) ( tony’s, salt and pepper)
½ C chopped onion or Scallions
1 ½ C shredded white cheddar cheese
Red bell pepper ( chopped)

Empanada:
1 pkg purchased pie dough (2 sheets)
1 egg yolk
1 Tbsp water

Directions:
Directions:
Saute corn in skillet till edges turn brown, about 8 minutes. Stir in cooked chicken, chilies, onions and peppers. Unroll 1 sheet of pie dough, using a 3 ½ inch circle cut out circles.( I used a rolling pin and rolled out the dough a little) Fill with filling and top with cheddar cheese. Fold in half and press edges with fork. Brush top of empanadas with blended egg yolk and water. Sprinkle with paprika.

Bake at 400º for 15 – 18 minutes.
