4 lb. 80/20 hamburger
1/2 uncooked white rice
3 cloves fresh garlic

1 stock of celery, just the green ribs
1 large onion
1 bunch of carrots, chopped

Fresh corn on the cob, cut into 2” pieces
1 cabbage, chopped
5-6 potatoes (sm to med), chopped
2 zucchini, sliced

1 small can tomato sauce
1 box of beef broth
1 box of vegetable broth
Cumin
Salt and pepper

Directions:
Directions:
Boil in pot: water 1/2 pot, cumin, tomato sauce, beef and vegetable broths.

Mix meat with uncooked rice, chopped fine cilantro & seasonings
Roll into balls (don't over work, will be tough).

Add to hot broth: meatballs, chopped celery, carrots and onion. Cook covered 1/2 hr. - 45 minutes.

After 30-45 minutes, add remaining ingredients. Simmer until vegetables are done.

Serve with white rice or mexican rice on the side. Chopped cilantro, onions, lemons/limes. Corn or flour tortillas.

Great on a cold or rainy day. The 2nd day is best.

If you prefer a more clear broth, you can bake the meatballs for approx 45 minutes at 350º. Drain and drop into pot with the second set of veggies.
