Espresso Spread:
4 oz. cubed cream cheese
1 TBSP sugar
1/2 tsp. instant coffee grounds
1/2 tsp. vanilla
1/4 c. miniature chocolate chips

Muffins:
Combine:
2 c. flour
3/4 c. sugar
2 1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt


1 c. milk
2 TBSP instant coffee granules
1/2 c. melted butter
1 egg, beaten
1 tsp. vanilla

Directions:
Directions:
In another bowl stir milk and coffee granules until coffee is dissolved. Add butter, egg and vanilla. Mix well. Stir into dry ingredients only until moistened.

Fold in 3/4 c. miniature chocolate chips. Bake at 375 for 18-20 minutes. Cool. Serve with espresso spread.
