1 egg
1/4 tsp salt
1 cup warm butter
1 cup sugar
2 3/4 cups flour
1/2 cup blanched and ground almonds
1/2 tsp vanilla

Directions:
Directions:
Cream butter and sugar. Add beaten egg. Add dry ingredients. Form into ball and refrigerate overnight.

Press into sandkaker forms and place on cookie sheet. Bake at 400º until golden brown. Remove from forms quickly by inverting and tapping on bottom. Don't burn your fingers!!

Serve plain, with preserves or with whipped cream.

This is Margaret Hamre's recipe. We have made this recipe for many years and they are just delicious! You can freeze them or keep in a tightly covered tin for 2 weeks. Some recipes call for using PAM and flouring the forms before pressing the dough in, Grandma never did that. We just had to get them out fast, leading to the nickname: Norwegian hot finger cookies!
