1 3/4 cups flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/2 cup raisins that have been plumped in hot water (drained)
1/2 cup chopped walnuts
3/4 cup brown sugar
2 eggs
1 8 1/2 ounce can crushed pineapple undrained.

Preheat oven to 350 degrees.

Beat sugar and butter. Add in eggs one at a time. Add raisins and nuts. Sift flour, baking powder, baking soda, salt. Add half the flour and 1/2 of the pineapple to the sugar and butter. Mix thoroughly then add remaining flour and pineapple.

Spoon batter into a loaf pan. Top with cinnamon sugar (2 tbsp mixed with 1/2 tsp cinnamon).

Bake 60 to 70 minutes or until done by toothpick test.
