Chicken Cacciatora Recipe

1 chicken cut into 10 serving pieces
1/2 cup flour
1 tsp salt
1/4 tsp pepper
1/2 cup oil
1/4 cup chopped diced carrot, celery, onion
2 cloves minced garlic
1 large can chopped tomatoes drained
1/4 cup white wine.

Preheat oven to 350 degrees.

Dredge chicken in 1/2 cup flour, 1 tsp salt and 1/4 tsp pepper. Sautee in 1/2 cup oil until brown. Remove from pan and keep warm.

Add vegetables and sautee. Add garlic, bay leaf and parsley.
Add tomatoes. Taste for salt and pepper, seasoning as needed.
Add wine. Return chicken to the pan and simmer on the stove top until chicken is tender.

You can also move pan to the oven at 350 degrees to finish braising. Serve over wide egg noodles.
