1 tsp. vegetable oil
1 cup finely chopped onion
2 garlic cloves, minced
1 T chili powder
1 tsp. ground cumin
1 tsp. dried oregano
29 ounces chicken broth
29 ounces diced tomatoes, undrained
1 (16 oz.) can refried beans
1 bay leaf
Torilla Chips, crushed

Heat oil in a large saucepan over medium heat. Add onion and garlic; saute 3 mins. Add chili powder and the next 6 ingredients. Bring to a boil; reduce heat, and simmer 45 mins. Remove from heat; discard bay leaf. Ladle into bowls; top with chips.

This recipe tastes great every time and is very easy. The best part is that you can change it up every time! Try adding black beans, corn, chicken or fresh cilantro.
