1 c wheat berries
3 c lightly salted water (for cooking)
1 red pepper seeded and chopped
4 green onions thinly sliced
1/2 c chopped parsley
1/2 c dried cranberries
2 green apples cored and chopped
1/2 thinly sliced fennel or celery
2/3 c Raspberry Vinaigrette
1 tsp salt
fresh pepper

Directions:

Place wheat berries in colander, rinse with cold water & drain well.
Transfer to a bowl, cover with at least triple the amount of water and soak overnight.
Drain well.
Combine the wheat berries with lightly salted water in a saucepan and bring to a boil.
Reduce heat to low, cover, and simmer for 1 to 1 1/2 hours or until tender.
Drain if necessary and let cool.
In a large bowl combine wheat berries , red pepper, green onions, parsley, cranberries, apples and celery.
Add the vinaigrette, salt and pepper and mix well.
Refrigerate for at least one hour before serving.
