1/2 lb celery, diced
2 med carrots, diced
1/2 c onions, finely chopped
1/2 lb potatoes, diced
3/4 lb butter
1 1/2 c flour (yes, that much)
1/4 tsp ground thyme
2 tsp salt
1/4 tsp ground white pepper
3 qts turkey broth, heated**
3/4 lb cooked turkey, cubed
2 c milk
2 Tbsp fresh parsley, chopped
As needed, garlic croutons

Directions:

1. Cut celery into dice (1/4 inch). Melt butter and saute celery and onions 5 minutes until vegetables are tender.
2. Stir flour and seasonings into vegetable mixture. Cook 5 to 6 minutes at medium heat.
3. In a small sauce pan, heat 1 qt water to boiling and add potatoes and carrots. Cook until tender, about 5 minutes
4. Gradually whisk turkey broth into vegetable mixture. Cook at medium heat, stirring constantly, until sauce is slightly thickened and bubbly.
5. Fold turkey into sauce and continue cooking 15 minutes.
6. Stir in milk and parsley.
7. Serve each portion with garlic croutons, if desired.

**I put the turkey carcass in a pot of water with a couple of carrots and celery stalks and let it boil for several hours and then add a couple of chicken bouillon cubes to the strained liquid to make my broth.

This recipe isn't a quick one, but it is so worth it!! I usually double it so we'll have plenty of leftovers.
