1 can tomato sauce
1 tomato, chopped
1 cup BBQ sauce
1 yellow onion, thinly sliced
1-2 4.5 oz cans diced green chilies
1/4 cup chili powder
1 tsp. cumin
1 tsp. dried oregano or a small handful chopped fresh
1/2 tsp. cinnamon

1 2.5 lb. well trimmed boneless pork loin
1/2 cup chopped cilantro


Directions:

Mix all ingredients but pork in a 3 qt. or larger crock pot. Add pork then spoon sauce over to cover.

Cover cooker and cook on high 3.5 hours or low 8-10 hours. Pull the pork out and shred (if you have cooked 10 hours or longer the pork will shred itself if you just stir.) Pour the sauce into a serving bowl and add pork and chopped cilantro.

Serve in taco shells, warmed burrito tortillas or on burger buns.

Good topping: sour cream, shredded lettuce, diced red onion or shredded cheese.
