Spinach or Swiss chard (cut stems and chop)
Make a chiffonade
Chicken broth or stock

Directions:

Sprinkle with freshly grated Parmesan cheese
Beat egg (1 per person) with a teaspoon lemon juice
Heat stock just to a boil, remove from heat
Stir in the egg mixture until the broth is ribbony and slightly thickened

Ladle over the spinach (or chard) and stir just until wilted

Add salt if needed and serve immediately with additional grated cheese on the side.
