Ingredients:
Ingredients:
2 eggs beaten
2 tablespoons butter soft
3 1/2 cups rhubarb (or combo of fruits)
1 3/4 sugar
1/2 tsp cinnamon
1/2 tsp salt
7 tablespoons flour

Directions:
Directions:
Pour into unbaked pie shell and bake at 375 for 50-60 minutes (a little longer if frozen fruit is used).

When I make it, I usually use strawberries too, cut the sugar in half and add an extra tablespoon of flour so it's a little thicker. My favorite combo of fruit is equal parts rhubarb, strawberries, and blueberries. If I have raspberries, I like to throw them in too!

Personal Notes:
My friend gave me this recipe - her dad was the first certified organic farmer in New Hampshire! This pie is so easy - and delicious!
