2 Tbsp butter or margarine
½ cup plus 2 Tbsp sugar
¼ cup water
6 medium Granny Smith or Newton Pippin apples (2 pounds) peeled, cored, and cut into wedges
3 large eggs
¾ cup milk
¾ cup all purpose flour
¼ tsp salt

Preheat oven to 425. In oven-safe 12 in skillet (if skillet is not oven safe, wrap handle with a double layer of foil), combine butter, ½ cup sugar, and water; heat to boiling over medium-high heat. Add apples and cook, stirring occasionally, until apples are golden and sugar mixture begins to caramelize, about 15 minutes.

Meanwhile, in blender, combine eggs, milk, flour, remaining 2 Tbsp sugar, and salt and blend until smooth.

Pour batter over apples. Place skillet in oven and bake until pancake has puffed and is golden, about 15 minutes. Serve hot.

Luke and I love this cozy breakfast! I sometimes substitute some of the all purpose flour with whole wheat flour.
