1 medium onion, chopped
6 medium mushrooms, fresh, diced
10 oz frozen chopped spinach, thawed and pressed dry
1 Tbsp vegetable oil
5 eggs, beaten
3 cups (12 oz) Muenster or Monterrey Jack cheese, shredded
dash salt
dash pepper

Directions:
Directions:
Saute onion and mushrooms in oil. Stir in prepared spinach. Cook until mixture is “dry”, stirring often. Cool.

Combine eggs, cheese, salt and pepper to taste. Stir into spinach mixture.

Pour into greased quiche dish or 9 inch pie plate. Bake at 350 for 30 minutes until set and slightly browned.

Serve with sliced tomatoes and warm bread, if desired.

This is a really flexible recipe. I have made it using all different kinds of cheese, and sometimes add bacon and eliminate either the spinach or the mushrooms, depending on who I'm cooking for :) I always assemble it the night before, so it is ready to bake the next morning. Enjoy!
