1 1/2 lbs ripe tomatoes
1 c sugar
2 T squeezed lime juice
1 T fresh grated or minced ginger
1 tsp cumin
1/4 tsp ground cinnamon
1/8 tsp cloves
1 tsp salt
hot peppers/cayenne/red pepper flakes

Directions:
Directions:
Combine all ingredients in heavy saucepan.
Bring to a boil over medium heat, stirring often.
Reduce heat and simmer stirring occasionally until mixture has consistency of thick jam, about an hour.
Taste and adjust seasoning.
Cool and refrigerate until ready to use.
Will keep at least one week.
