2 chicken breats
2 eggs, lightly beaten
1 t. salt
1/8 t. pepper
3/4 C. fine dry bread crumbs
1/2 C. tomato sauce
1/4 t. basil
1/8 t. garlic powder
1 T. butter
1/2 C. grated Parmesan cheese
mozzarella cheese

Directions:

Place chicken on cutting board and pound lightly with side of knife until 1/4 in. thick. Combine eggs, salt and pepper. Dip chicken into egg mixture, then into bread crumbs. Heat oil in a pan until very hot; add chicken and quickly brown both sides and remove to shallow baking dish; pour excess oil out. Stir together tomato, basil, and garlic in pan. Heat 6 mins or until boiling. Then simmer 10 more minutes or until thickened. Stir in butter and pour over chicken. Then sprinkle with cheese and cover. Bake at 350 º for 30 minutes; uncover and sprinkle with mozzarella cheese. Bake 10 more minutes or until cheese melts.

You can put tin foil on a baking sheet and bake your chicken on that. When it's done you just remove the foil and your sheet is still clean. This is great with pasta and salad.
