1 eggplant
1 egg
1/2 c. bread crumbs
2 tbsp. of olive oil
1 can of tomato sauce
1 pkg. of provolone cheese

Directions:
Directions:
Peel one eggplant and slice.
Dip each slice in egg and then in bread crumbs. Heat olive oil in fry pan. Cook eggplant on each side until golden brown.
Add tomato sauce to bottom of baking dish. Add a layer of cooked eggplant. Add a layer of provolone cheese. Add another layer of cooked eggplant, tomato sauce and provolone cheese. Cover and cook in a 350º oven for approximately 40 minutes.
