1 ¼ c. uncooked rice
2 ½ c. water
2 bouillon cubes

½ c. onion diced
2 eggs
1 ½ c. chopped ham
1-2 T. veggie oil
soy sauce (optional)

Directions:
Directions:
Place water and bouillon in medium to large sauce pan with a well fitting lid. Place on burner, turn to high. When water comes to a boil reduce heat to low. Pour in rice, stir quickly with a fork, then place lid on sauce pan. Set timer for 20 min. Do not lift the lid or peek during this time. After 20 min. Remove from heat. Cool 10-15 min. Put into medium sized bowl. Cover, label and refrigerate.

Brown onion and ham in 1-2 T. oil, using a large pan, over medium high heat. Remove from pan. When onions look transparent. Reduce temperature to low. Scramble to eggs in pan, braking the egg into small pieces. Add rice and increase the temperature to medium heat. Mix and cook for about 2-5 min.
