1/2 c molasses
1 1/2 tsp grated zest and 1/4 c juice from 2 limes
1 c juice from 2 large oranges
2 medium garlic cloves, chopped
4 chipotle chilies in adobo sauce
Pan-seared pork chops (see recipe in this book)
2 Tbsp cold unsalted butter, cut into 2 pieces
Salt
Pepper

Directions:
1. Combine the molasses, lime zest and juice, orange juice, garlic and chilies in the workbowl of a food processor and puree until smooth. Transfer the puree to a bowl; set aside.
2. Pour off the fat in the skillet used to brown the chops. Place the skillet over medium-high heat and add the molasses puree, scraping the pan bottom with a wooden spoon to loosen the browned bits. Simmer until thickened and syrupy, about 2 minutes. Whisk in the butter, one piece at a time, until melted. Season the sauce with salt and pepper to taste and spoon the sauce over the chops. Serve immediately.
