1 Tbsp butter
1 c sweet potato, diced
1/2 c red bell pepper, diced
1/4 c scallions, chopped
2 tsp curry powder
1/4 tsp salt
1 egg
2 tsp flour
1/2 c vanilla yogurt
24 wonton squares
2 Tbsp butter, melted
1 jar mango chutney

Directions:
Directions:
1. Preheat the oven to 350º. Lightly spray a mini-muffin tin with cooking spray.
2. Melt 1 Tbsp butter in skillet. Add sweet potato, bell pepper and onions and stir. Cover and cook for 3 - 5 minutes, stirring occasionally until the sweet potato is tender. Stir in curry powder and salt and allow to cool slightly.
3. Beat egg and flour in a medium-sized bowl until smooth, then beat in the yogurt. Stir in the sweet potato mixture.
4. Lightly butter one side of the wonton squares and press gently into the muffin tin, buttered side down. Spoon the sweet potato mixture into wonton squares in muffin tin.
5. Bake 12 - 15 minutes until centers are set and wontons are golden brown. Serve with mango chutney.
