3 Tbsp soy sauce
12 oz salmon filet, cut in 2 pieces
1 Tbsp rice wine vinegar
1 tsp sesame oil
1 tsp lemon or lime juice
Pinch sugar
2 tsp fresh ginger root, peeled and grated
1 garlic clove, minced
1 tsp sesame seeds
1 avocado

Directions:

1. Preheat oven to 400º.
2. Brush the salmon filets with 1 Tbsp of the soy sauce. Bake the salmon on a baking sheet for 10 - 12 minutes, or to your liking.
3. While the salmon cooks, whisk together the remaining soy sauce, rice wine vinegar, sesame oil, citrus juice, sugar, ginger and garlic in a small bowl. Salt to taste.
4. Pit and peel the avocado and cut into 1/2" slices. Add to the dressing and toss lightly to coat.
5. Plate the salmon and pour the avocado and dressing mixture over the top of the salmon, then sprinkle with sesame seeds. This dish is best served with brown or black rice.
