12 oz. ziti pasta
1 jar (24 oz.) marinara sauce
1 can (14.5 oz.) diced tomatoes with basil, garlic and oregano
8 oz. frozen cocktail-size meatballs, thawed, halved, 2 cups
2 oz. sliced pepperoni, 1/2 cup
1 container (15 oz.) ricotta cheese (I don't use this)
1 pkg. (8 oz.) shredded mozzarella cheese, 2 cups
1 tbsp. chopped parsley

Preheat oven to 375º. Generously coat 13x9 baking dish with cooking spray. Cook pasta according to directions. Drain well. Reserve 1 cup marinara sauce; stir remaining into pasta along with tomatoes and their juice. Layer about 1/3 of pasta mixture in dish; top with 1/2 of meatballs, 1/2 of pepperoni, and 1/2 of ricotta. Repeat layers. Top with remaining pasta and reserved marinara sauce. Cover with foil. Bake 40 minutes. Uncover; sprinkle with mozzarella. Bake 7 - 9 minutes more. Remove from oven and cool for 10 minutes. Just before serving, sprinkle with parsley.

Yield: 8 servings
