2 cups dried black-eyed peas
Ham bone for seasoning peas
1/2 lb. cooked ham, chopped
2 qts. water
1 cup uncooked regular rice
1 cup chopped onion
1 cup chopped celery
2 tsp. butter
1/2 - 1 tsp. Italian seasoning (optional)
1 tsp. sugar
2 tsp. salt
1/4 tsp. black pepper
1/3 cup chopped jalapeņo (from jar)
1/2 lb. smoked sausage (optional)

Directions:
Directions:
Sort and wash dried peas; place in a heavy saucepan. Cover with water and bring to a boil; cook 2 minutes. Remove from heat; cover and let soak for 1 hour. (Or just soak overnight.) Drain. Combine ham and 2 qts. water in large Dutch oven; bring to a boil. Add washed and soaked peas. When it comes to a boil, reduce heat and cook until peas are done. Remove ham bone. Add remaining ingredients; bring to a boil. Reduce heat again and simmer until everything is done, including rice. Add slices of smoked sausage and chopped jalapeņo, if desired. Can be cooked in crockpot after peas are done.
