1 cup quinoa, uncooked
2 cups broth (chicken or vegetable)
2 sweet potatoes
2 tbsp olive oil (plus more to roast sweet potatoes)
1/4 tsp cayenne pepper
2 tbsp lemon juice (or lime)
salt and pepper to taste

Directions:
Directions:
Peel and dice sweet potatoes, toss with olive oil, salt and pepper and roast on baking sheet at 350º until crispy.

Simmer the quinoa in the broth about 10 to 15 minutes, or until water is gone and quinoa is light and fluffy when stirred.

Toss together the quinoa and sweet potatoes in a large bowl. In a separate small bowl, whisk together the lemon juice, olive oil and cayenne pepper. Gently toss this dressing with the quinoa. Season with a generous amount of salt and pepper. Serve warm or at room temperature.
