3 cups milk
2 cups sugar
1 1/2 cups cornmeal
1 tablespoon butter
2 tablespoons all purpose flour
1 dash salt
2/3 cups freshly grated Parmesan cheese
4 eggs
1 teaspoon baking powder

1. Preheat the oven to 350º F
2. Butter either a rectangular cake pan or 24 small individual round pans
3. Beat the egg whites until firm
4. Mix together all ingredients except the last four
5. Mix in the cheese and the egg yolks and beat again
6. Fold in the egg whites and baking powder by hand
7. Pour into cake pan
8. Cook for 45 minutes (rectangular cake pan) or 30 minutes (individual cake pans)
9. Remove from oven and let cool

This recipe is from my maternal grandparents' cookbook. My grandfather made a note to the effect that "the peculiarity of this cake is that, when cut, a layer of cheese is in the middle, making it look like it was layered and filled
