1 1/2 cups sugar
1/2 cup butter
3 egg yolks
2 cups raw mandioc (yucca), shredded
1 cup coconut milk
2 tablespoons baking powder
1/2 cup all purpose flour
3 egg whites, firmly beaten

Directions:
Directions:
1. Preheat the oven to 350º F
2. Butter a rectangular cake pan
3. Beat the egg whites until firm
4. Beat the sugar and the butter in a mixer
5. Add the egg yolks and beat
6. Slowly add the shredded mandioc, alternating with the coconut milk to incorporate well
7. Sift the flour with the baking powder and mix into the mixture gently
8. Gently fold the beaten egg whites into the mixture
9. Pour into the greased cake pan
10. Place in the oven and cook for about 30 minutes
