2 (14-ounce) cans fat-free, less-sodium chicken broth
5 cups frozen country-style shredded hash brown potatoes
1 cup chopped onion
1/2 teaspoon pepper
1/4 teaspoon salt
2 tablespoons all-purpose flour
1 (12-ounce) can evaporated fat-free milk
1 cup (4 ounces) preshredded reduced-fat sharp Cheddar cheese
2 1/2 tablespoons chopped precooked bacon, crisped (4 slices) or ham

Directions:
Directions:
1. Combine first 5 ingredients in a pot; bring to a boil. Reduce heat, and simmer, uncovered, 20 minutes.
2. Place flour in a small bowl. Gradually add milk, stirring constantly with a whisk until smooth. Stir flour mixture into potato mixture; cook over medium heat 5 minutes or until thick, stirring constantly.
3. Pour half of potato mixture into a blender; process until smooth, stopping once to scrape down sides. Pour pureed mixture into a large bowl. Repeat procedure with remaining half of potato mixture.
4. Return soup to pan. Add cheese; cook over medium heat, stirring until cheese melts. Ladle soup into bowls; top each serving with bacon.
